The main types of coffee processing are natural, washed and honey, each of which produces a different flavor profile for the coffee.
Also known as the dry process, the fruit is left on the bean, which is dried and then stripped. It’s the more traditional method. The beans ferment as the sugars and mucilage attach to the seeds. Natural Arabica and Robusta beans are both known as “Cherry”.
Also known as the wet process, the fruit matter is stripped off of the bean. The beans are then washed before being dried, removing any sticky mucilage from the bean. Washed Arabica beans are known in India as “Plantation”, while washed Robusta beans are referred to as “Parchment” .
Also known as the pulped natural method, this method involves partially removing the pulp from the bean. The remaining pulp sticks to the bean during drying and affects the taste.
